La Viña–Style Cheesecake
This recipe was adapted for our readers from the celebrated recipe redeveloped by Santiago Rivera at the La Viña bar and restaurant in Donostia-San Sebastián, Basque Country, Spain. With just five ingredients and a few simple steps (no fussy water bath), this crustless cheesecake delights with its lightly caramelized exterior and ultracreamy interior.
Bagna Cauda Potatoes
For this twist on a classic dish from the Piedmont area in Italy, we bathed tender red potatoes in bagna cauda, a mixture of salty anchovies, garlic, and olive oil that's traditionally served as a communal dip. These potatoes will draw a crowd (even non anchovy lovers will want two helpings!) so make sure you make enough.
Buffalo Chicken Chili
Buffalo chicken and chili are both crowd-pleasers, so combining them is a no-brainer. Hot sauce, butter, and celery brought the flavors of buffalo wings to this hearty chicken chili. Using shredded rotisserie chicken made the chili come together in a snap (just 40 minutes from start to serve).
San Diego Fish Tacos
Our version of San Diego–style fish tacos is inspired by tacos served at Karina’s Cantina in the Gaslamp Quarter of downtown San Diego. Like Karina’s, we fill our tacos with griddle-cooked, or “grilled” cod because it’s flavorful, sturdy, and an even match for the zarandeado sauce (an assertive mixture of dairy products, mustard, chiles, and several other ingredients).
