 A New Era of Ceramic Nonstick Skillets.

Ceramic nonstick skillets offer some intriguing benefits (safer materials, environmentally friendly, etc.) over traditional nonstick skillets, but by and large we’ve found that ceramic skillets don’t live up to the hype. In our previous tests, the ceramic skillets failed miserably–cooked food clung to the pans (even the new pans!) and they deteriorated quickly. Manufacturers are constantly making updates to their products, so to keep our ratings accurate, we’ll retest equipment accordingly. In our most recent test of ceramic nonstick skillets we wanted to find out if any newer models could meet our nonstick and durability expectations. Spoiler alert: This time we found a ceramic nonstick model that we liked and can recommend if you’re looking to add a ceramic nonstick skillet to your collection.

GreenPan Valencia Pro Hard Anodized 8" Nonstick Frypan

WINNER - RECOMMENDED

Our favorite 8-inch ceramic nonstick pan had a spacious and slick surface that was ideal for cooking small batches of sticky or delicate foods. We loved cooking in it. Because the skillet conducted heat so effectively, we had to follow visual cues as we cooked to ensure that food cooked properly and didn’t burn. Food will likely cook faster than it would in a regular nonstick pan. We loved this pan’s wide, comfortable handle.

GreenPan Valencia Pro Hard Anodized 10" Nonstick Frypan

WINNER - RECOMMENDED

With a slick nonstick coating and gently sloped walls, this skillet is a pleasure to use. We also liked its wide, comfortable handle. Like our favorite ceramic nonstick pans, it conducted heat well and therefore ran a little hot. To compensate for this, we had to turn down the heat or take the pan off the burner before the end of the stated cooking time to prevent food from burning or sauces from evaporating. We were able to get great results by following visual cues and making minor recipe adjustments. This pan is ovensafe to 600 degrees—a considerably higher temperature than the ovensafe temperatures of regular nonstick skillets that include PTFE in their coatings.

One of only two pans to pass our test of nonstick coating durability, this pan arrived slick and remained so throughout cooking and abuse tests. It also has a broad cooking surface, gently sloped walls, and a comfortable handle. Because it runs a little hotter than our favorite regular nonstick skillet, you may need to adjust the heat level or cooking time when following recipes. It became scratched when we cut in it.

How We Tested Nonstick Skillets

8" Skillet

The manufacturers of our top two 12-inch ceramic nonstick pans, GreenPan and Kyocera, also make 8-inch models, so we decided to test them. We used both pans to prepare scrambled eggs and fried eggs, as well as the sauce and bread crumb topping for Tagliatelle with Artichokes and Olive Oil for Two. To learn more about the pans’ performance and handling, we also used them at home for several weeks of real-life cooking. 

10" Skillet

We tested seven 12-inch ceramic nonstick skillets, priced from about $19 to about $80. None of the skillets contained polytetrafluoroethylene (PTFE), the compound found in regular nonstick skillets that can release dangerous fumes if the pan is heated above 500 degrees. We prepared fried eggs with no oil, Beef and Broccoli Stir-Fry, Pepper and Onion Frittata with Arugula Salad, Pan-Fried Sole with Lemony Herb Butter, and Sautéed Peas with Shallot and Mint.

12" Skillet
